A late night craving..

So the hubs works late at night, and to keep myself awake I watch tv. Well, at 1 in the morning, my favorite watch is Diners, Drive-ins, and Dives, and oh my gosh! I literally drool and wish I could drive cross country in the middle of the night to eat some of the amazing things he finds on this show! Give it a watch, it's amazing (if you're a greasy/meat/cheese/homestyle lover like I am at least), and it will make your mouth water! To be honest, it's not even always unhealthy stuff, I just saw a salad made, so, really, give it a watch :)

just a few fall dessert ideas...

I love fall, I know I've already told you. Everyday as the weather gets colder, I get happier. A lot of the food blogs and websites I look at are just filling up with fall recipes and ideas; so I thought I would share a few with you. Unfortunately, I'm on a cleansing diet this week. I meant to do one before school and fall began but kind of ran out of time. For me, I think it is very important to just clean out my system once in a while. No, they're not fun, but I usually feel so much better afterwards (I have a lot of random little health quirks). Sooo, as I am not allowed desserts for the next few days, I find ones to drool over. From my two favorite blogs, I found absolutely delicious looking and sounding apple cakes perfect for fall. Give them a try; let me know how they turn out.

Here we have an "Easy Apple Cake" from Bakerella. She's absolutely wonderful if you haven't looked at her blog before. Cake pops were kind of her invention and they're huge now. She was on martha stewart, and people are using cake pops and brownie pops and cheesecake and cake balls and they're just such a great idea. I have yet to try any, but I will soon. This apple cake will be my next endeavor. And it's easy!

From the kitchen of honey and jam; a carmel cake with apple filling. Yum right? This one doesn't look quite as easy. Since there are three parts; the cake, the filling, and the frosting; it make take a little more time, but I still think it's worth trying. I might try this at thanksgiving. Honey and Jam is another one of my favorite blogs. The photography is stunning and her recipes are also just as dreamy.

I hope everyone has a fabulous weekend. Mine will be full of homework and studying, but spent with my love, so still wonderful.

yum.. from smitten kitchen

Ok, so the honest truth? I haven't done any cooking in about a week; or anything interesting for that matter. I don't love the summer. I know this sounds weird, because everyone loves the sun and the summer and the summer activities, but I don't think I ever have LOVED it. Being hot is one of my least favorite things, and I try all the tricks to keep cool but even during the winter, I'll wear a t-shirt and shorts; I don't know what the deal is, but I'm always hot. I love fall, and winter, and spring; so my good mood in those three seasons makes up for the complaining mood of summer. Well, since it has been rather hot (I'm so spoiled I live in a city with the worlds most mild temperatures) I have kept my activities to a minimal. We (Martin and I) start school in about a week, so that's another reason why we have tried to keep our schedule open. So I have managed to stay out of the kitchen and the yard, but it's time to get back. Kind of sad, but we have to have a normal life now. The honeymoon is over. No more seeing each other for about 95 % of everyday and having most of the week to do as we please. It's time to get serious (with school at least) and unfortunately we're not at the same school this quarter. This fall is going to be a HUGE adjustment for me. Have I not given you the details to our current delightful schedule? Martin works 2 nights a week. On those nights, I bring him dinner on his break, and I get to stay in text contact with him most of the evening. And I could visit him if I wanted (which I used to do). He plays a show every Sunday night, which I go to most weeks (so we're not actually apart). And occasionally he has shows on Saturday somewhere in the Bay Area, and I almost always go with him (so again, we're not apart). I babysit for a living (a minimal living, but again we do not have to part). Up until last week we shared my car, so we run most errands and do just about everything together. Pretty awesome huh? And to think, we're giving that up for an education (wink wink). We've been dying to go to school actually. With budget cuts and registration cuts, we were not able to apply last fall or spring, and opted to not go summer, so we've been having the time of our lives. So wish us luck!
Enough of the personal stuff.. I wanted to tell you about all these yummy thoughts I have, and since I'm not posting about anything else, I've been sharing what I have found. Also, I've organized the blogs I look at into my favorites folder this week, and so I can actually keep up with some of them. This picture, of peach shortbread is from smitten kitchen, which I check out regularly, and I plan on making these.. like this week. Don't they look yummy?! And, my guess is they aren't that difficult to make, so I'm gonna give it a try. Anyways, I hope you have a had a wonderful weekend, and I hope you take a look at a few of the blogs I recommend. I don't cook often enough to have a stacked library of recipes, but, I can lead you in the direction of some people that do.

i've been thinking about...

this.. or something like it. For the past while I've been trying to eat healthier, and I have been. I think I dropped a few lbs and I've been feeling better. BUT, I just have these cravings for sweets, and not just sweets, but like, buttery, gooey sweets, with a crust, the worst kind! Anyways. I saved this picture of a chocolate pecan (derby pie) pie, which I think I've made a similar one before, and this is kind of what I want right now. Doesn't it look delish :)
Well happy weekend everyone. We've got plans for yard work, a good bike ride, a big family birthday party, and hopefully some down time.
with love
kristin ann :)
p.s. the picture was found here and the recipe as well. i tend to go through blogs and save pictures of pretty things or things that I want to make, and I think that's why this yummy thing was saved in my pictures. it's a sweet little blog much like mine; recipes, fashion, photography, weddings, and on and on. she found my blog, and then I found hers. it's great how blogging works like that.

music calms my soul..

Martin and I were shopping in Santa Cruz, heard a song being played in a store, asked the guy working there who it was, and he told us. Mumford and Sons. They're from London England, so they've got great accents, and they play "folk rock," which is kind of my new thing. Anyways, the song is called the cave. I have their cd in my car, and this one is my fav.

Also, The Swell Season, is one of our favorite bands, and I think you would love them. They won an oscar for a song they wrote and performed in the movie once, and it's amazing. I fell in love with that song and bought the piano sheet music and fall in love with it more and more everytime I play it. We went to their concert a few weeks ago, and they are inspiring. A guy and girl duo with a band. Guy is irish, girl is czech; so both have great accents, and they're wonderful. Here's a song they played at the show.

{I've been wanting to share the Swell Season with you for a while, I hope you enjoy. And of course I hope you're having a wonderful weekend.}

I want to teach you how to cook...

I'm not a professional by any means, but for whatever reason I have always had a knack for cooking. It may be because I started at a very young age, so if you figure I began cooking and baking regularly at the age of 12, I've been doing it for over 12 years, thats a long time to develop a hobby and skill, which means, anyone can do it, given the time and practice. The fact that I LOVE to be in the kitchen may also have something to do with it.

I am asked on a regular basis for recipes of mine and I always feel bad because, I don't normally use recipes. So when I try and write it out, and someone uses that exact recipe, it most likely will not turn out the way I intended. When I cook I taste, feel, smell, and look to see what's going on and how things are turning out, as opposed to reading and measuring and more reading. This habit may have developed from the bad habit of mine to not enjoy reading, but regardless, it's just how I do things now. If you can learn to be flexible in the kitchen, your ability to prepare meals with ease will definitely shine through, and that's what I would love to teach you.

Learning how to substitute is key. When I'm making dinner or dessert or anything in the kitchen, I survey what I have first. Now sometimes you may have something exact in mind, like a pumpkin cheesecake for example (which has been on my mind for a few weeks now, I love fall so much) and so you will need to go to the store and buy the exact ingredients for what you are making, but it is still good to take note of what you have.

The other night I went into the kitchen to make some dinner and this is what happened. I'm going to share a step by step of how this dinner came to be, and really this is how I do most of my cooking. So the sooner you can become comfortable in your own kitchen, the sooner you'll enjoy, if not love, cooking. Keep in mind things don't always end up the way I planned. I don't usually botch a dinner, only because I generally use slight variations from previous dinners I've made, but I do make mistakes, no one is perfect.
  • I made a big luncheon the other day for a church activity so I had some leftover ingredients that I had wanted to use. The plan was to recreate the chicken alfredo I had made the previous day, but I was going to make a much smaller portion (for Martin, my dad, and myself).
  • I knew I had about a half a box of fettuccine left, a container of mushrooms, cream, shredded parmesan, ricotta, and a half a head of garlic, and a few extra chicken breasts.
  • A little trick to know about pasta... Almost all pasta cooks at the same speed, and it is really hard to mess up plain pasta. In a boiling pan of water, throw in whatever pasta you're cooking, and add some salt. Make sure to stir right at first, so the salt dissolves. Most boxes of pasta say to cook from 8-12 minutes, depending on how firm you like it. I prefer my pasta soft, so not al dente, which is what the instructions are for. But with this tid bit of information, you now know you can mix and match whatever pasta you want. There have been many times when I go to make a favorite pasta salad and we have about a half cup of 3-4 different pasta boxes, and so I'll just throw in all of them, it always cooks up fine. Also, you can try and buy the same brand of pasta, so you have some kind of consistency in your kitchen, which makes it easy to create new things. We like barilla :) Then you can store it like this, in canisters, and it becomes even easier to cook with pasta.

  • I started cooking the fettuccine, it probably took about 15 minutes. By the way you can use any kind of pasta for this dish. My mom uses the bow tie pasta to do her chicken alfredo, so be creative.
  • For the chicken, I used the george foreman grill. This little grill is so amazing, if you don't have one, you should go now and get yourself one. They make it in a few sizes (I have a 2 serving size, but my family has the family size, which fits about 4 servings). You can put a frozen chicken breast right in there and in about 15 minutes it will be done, it's awesome. I like to defrost any meat before putting it on the grill, so you get a more even temperature all the way through, but that's only when I'm being picky. With a little olive oil, salt and pepper, just about anything will cook up wonderfully, and with little cleanup. with a pasta dish I usually plan on 1/2 - 3/4 a chicken breast per person. So with 3 people, 2 chicken breasts will be more than enough.
  • While the pasta and chicken are cooking away (stir the pasta once in a while) I started on my sauce and vegetables. In a medium frying pan, over medium heat I start to saute my garlic (that I chopped as fine as I could get it). If you don't have garlic, use garlic salt or garlic powder, if you don't like garlic, use a fresher herb flavor like basil or thyme, or just salt and pepper, whatever you prefer. Add a few tablespoons of olive oil, and add the chopped mushrooms, and zucchini (which my dad had just brought home so I decided to throw it in as well) and salt and pepper. Add a few more tablespoons of olive oil, and either stir or flip the pan every minute or so. Once the zucchini start to show some transparency, they're done (about 5-8 minutes). Put on a serving platter and set aside. You can use any vegetable, or no vegetables, you can be extremely flexable with this meal. Throw in some onions and bell peppers if you wanna be spicy, or even some chopped tomatoes (which only need a few minutes to cook, they get mushy if they cook too long).
  • The pasta should be about done (u can cut off a small piece, let cool off and taste to see if it feels cooked through to preference). If done, pull of heat, and drain, then pour onto serving platter with veges, and toss.
  • In the same frying pan over medium heat, add about a cup of cream. (I figure about 1/4-1/3 cup per serving). While stirring, let it come to a boil. I decided not to use the ricotta, since it had made the alfredo for the luncheon a little chunky, which I did not like, but I still used the shredded parmesan (about 1/2 c.). Salt and pepper to taste and as soon as the cheese has melted, you're done! To thicken the sauce, if you would like it thicker, you can add a little more cheese and/or just cook it longer, making sure to stir the bottom of the pan very well. Pour the sauce of pasta and vegetables and toss.
  • When the chicken is done (cut through the center of a breast to make sure there is no pink) transfer to a plate, slice, and place on top of the pasta platter. Garnish with parmesan cheese, and basil (if you have it, I didn't want to run to the store, so we didn't have any).
  • So this meal could've been made with a million variations, and I hope that you see, and recipe can be changed, either to fit your preference, or just to fit what you have in your kitchen, to keep you running to the store.

spend an afternoon... hiking mission peak :)

{these are phone photos, hence the odd focus and what not}

Don't know if you've heard, but I'm in love.
Last saturday we decided to do something productive with our day off, and after a debate over whether or not we thought I could actually make it to the top (Martin thought I could, I thought I could not) we just decided to go for it. With the loving support of my man, we actually made it to the top! Keep in mind it took us a very long time, and many breaks were needed (by me of course, not Martin). But the weather was perfect, and the view was amazing, and I could not have asked for a better day.

weekend end :)

The Regina Spektor concert was so so amazing! I wanted her to play hours and hours more (unfortunately she stopped after 2). It was definitely the best show I've ever been to. I would recommend to anyone to see a show at the Fox Theater in Oakland. If you sit up in the balcony it is a lovely experience because you get to sit (which I love) and you're still very close to the stage. Loved it! The love of my life took the night off work, and I had a much better time with him than I could have had with anyone else. We also went to dinner at Scott's in Oakland on the wharf, a seafood restaurant, fabulous, I recommend it. (I love you Martin p.s.)

Halloween was also very fun. Melissa, Ryan and the boys, Heidi and liz, and John, Carrie and their boys all came over to the house for some pizza and snacks and then we went trick or treating! Holidays are much better when you have toddlers to enjoy them with.

Hope your weekend has been as fabulous as mine!

Happy Monday all :)

Cannelle et Vanille

I'm not sure how I found it, but I found it regardless; the most amazing cooking blog I've ever seen. The woman that does the blog, I'm not sure the name, photographs food, does food styling, creates recipes, she's amazing. A lot of her recipes seem to be french inspired, but it makes it all the more interesting seeing what she posts. Check it out :)

Swedish Meatballs

Ingredients
2 slices fresh white bread
1/4 cup milk
3 tablespoons clarified butter, divided
1/2 cup finely chopped onion
A pinch plus 1 teaspoon kosher salt
3/4 pound ground chuck
3/4 pound ground pork
2 large egg yolks
1/2 teaspoon black pepper
1/4 teaspoon ground allspice
1/4 teaspoon freshly grated nutmeg
1/4 cup all-purpose flour
3 cups beef broth
1/4 cup heavy cream

Directions
Preheat oven to 200 degrees F.
Tear the bread into pieces and place in a small mixing bowl along with the milk. Set aside.
In a 12-inch straight sided saute pan over medium heat, melt 1 tablespoon of the butter. Add the onion and a pinch of salt and sweat until the onions are soft. Remove from the heat and set aside.
In the bowl of a stand mixer, combine the bread and milk mixture, ground chuck, pork, egg yolks, 1 teaspoon of kosher salt, black pepper, allspice, nutmeg, and onions. Beat on medium speed for 1 to 2 minutes.
Using a scale, weigh meatballs into 1-ounce portions and place on a sheet pan. Using your hands, shape the meatballs into rounds.
Heat the remaining butter in the saute pan over medium-low heat, or in an electric skillet set to 250 degrees F. Add the meatballs and saute until golden brown on all sides, about 7 to 10 minutes. Remove the meatballs to an ovenproof dish using a slotted spoon and place in the warmed oven.
Once all of the meatballs are cooked, decrease the heat to low and add the flour to the pan or skillet. Whisk until lightly browned, approximately 1 to 2 minutes. Gradually add the beef stock and whisk until sauce begins to thicken. Add the cream and continue to cook until the gravy reaches the desired consistency. Remove the meatballs from the oven, cover with the gravy and serve.

Another gem from the wonderful foodnetwork website!

Bacon-Wrapped Shrimp

Ingredients
20 strips bacon (about 12 ounces)
20 medium-large shrimp, shelled and deveined (about 1 pound)
1/2 cup barbecue sauce
1/4 cup canola oil
3 tablespoons lemon juice
1 teaspoon dijon mustard
3 tablespoons chopped chipotles in adobo sauce
1/2 teaspoon red pepper flakes
1/4 teaspoon cayenne pepper
Freshly ground pepper

Directions
Soak 5 to 8 bamboo skewers in water for about 20 minutes to keep them from burning on the grill or under the broiler.
Meanwhile, cook the bacon in a large skillet until halfway done, about 4 minutes. Drain and cool on paper towels. Wrap a piece of bacon around the middle of each shrimp; skewer with bamboo through the point where the bacon ends meet to keep it from unraveling. Thread 3 to 5 shrimp on each bamboo skewer.
Puree the barbecue sauce, oil, lemon juice, mustard, chipotles, red pepper flakes, cayenne pepper and 1/4 teaspoon freshly ground pepper in a blender. Set aside half of the sauce for dipping.
Preheat a grill, grill pan or broiler. Grill or broil shrimp (on a foil-lined baking sheet, if broiling) for 5 minutes, basting with the sauce once they begin to turn pink. Flip, baste again and grill or broil until just cooked through, about 4 more minutes. Serve with extra sauce.

This delightful recipe was found at foodnetwork.com
It's a wonderful place.
Try this recipe with chicken, or salmon, the cook time will be slightly different depending on the meat, but will still be oh so amazing!

my new favorite thing

When I'm having a bad day, or maybe just a hot day, I now have something for the cure.. frozen yogurt!! The trick is, you can't get just any frozen yogurt. Most places sell non fat ice cream and call it frozen yogurt, but its a hoax. You have to try real frozen yogurt, usually a very tart and tangy flavor with fresh fruit toppings!! I don't know who started this new trend, possibly pinkberry, which is a chain around the US but only in pretty ritzy places.
Close by we have Pink Swirl, which is on Mission blvd, almost to Ohlone college, and even closer, and my new personal favorite, Yogurtuille, in the Panera/Chipotle shopping center on Paseo and Mowry. Try it!! I know you'll love it!!

It's so amazing, you go in, usually it's self serve, and it's by weight, so any number or toppings or flavors and it's so so wonderful. Let me know what you think!! Also, at yogurtiulle, it's buy one get one free! Jen and I took advantage of it just the other day.
Happy Wednesday :)

a few hours over in.. Berkeley

Martin and I went out to Berkeley this morning to check out a used gear sale at REI and because we didn't make it out early enough to get first ins, we ended up having a few extra hours to hang out, and it was amazing!! The moment I suggested a possible farmer's market in the area, we happen to drive right by the Berkeley farmers market! We parked, and found it to be are most favorite yet! We bought some delicious white nectarines, heirloom tomatoes (a new recent fav), basil, an orchid, and just down the street we found a toy shop that sold one of Martin's favorite games!!
I would recommend going to farmer's markets in the your area. Santa Cruz was our favorite up until today! But supporting local farmers is a great thing, and we should start to appreciate healthy locally grown things, and helping those who are trying to make a living as opposed to helping company's who already have enough money!

have you seen...Wicked!!??

If you have not, you definitely need to!! I'm not sure how long the company will be staying in San Francisco, but it is one of the best shows I've ever seen!! They have two prices for tickets, so obviously try for the cheap, but they sell out fast, so even if you have to pay the full price, just do it!! I was lucky enough to go for my birthday, and we had really good seats (thanks to the love of my life who surprised me with the tickets). Check out the schedule and go soon!!!
http://www.shnsf.com/shows/wicked

We also went to one of my all time favorite restaurants, Scomas. It's right around the fisherman's wharf area, kind of hidden off the back of a pier. My whole family loves it, and even with the prices being a little high, still worth it to go once and a while, for special occasions and what not.

Try the lobster bisque!!

We also spent a little time at the Conservatory of Flowers in Golden Gate Park in SF. It boggled my mind that I have never bothered to go. Orchids are my favorite flower and they are the most abundant! A lot of exotic plants and flowers you really can not see anywhere else! It's only a few dollars and worth the trip, especially with all that's available around Golden Gate Park.

Just down the street from the Conservatory of Flowers is Stow lake, where you can rent paddle boats, bikes, and lots of other fun things!! It was a lot of fun, and really beautiful.

I had a wonderful birthday, thanks to all those who sent birthday wishes, family, and my amazing boyfriend who planned the whole day for us.

I love a good burger!

Have you ever stumbled upon www.foodnetwork.com ? because you should!!! Not only do they have amazing recipes, suggestions, and entertaining ideas, but you can search any recipe or ingredient, and they have so many good ones! It is one of my favorite cooking tools, and something I use every time I try something new in the kitchen.

I stumbled upon some burger recipes today...

here was my favorite...

Directions
Bobby's Perfect Patty
Shape 6 ounces of 80 percent lean ground beef chuck into a uniform patty, no more than 3/4 inch thick (don't overwork the meat). Make a depression in the center with your thumb so the burger won't bulge; the indent will rise as the patty cooks. Preheat a grill or cast-iron grill pan to high. Brush the burger with canola oil and season with salt and pepper. Grill until golden brown and slightly charred, turning once (7 minutes for medium-rare). Avoid pressing with a spatula! Add cheese for the last minute of cooking.
Cheese
Your pick: Monterey Jack is a California favorite, but Bobby loves this burger with cheddar, too.
Avocado Relish
Avocado is one of Bobby's favorite ingredients. He mixes 2 chopped Hass avocados with 1/2 diced small onion, 1 minced jalapeno, the juice of 1 lime, 3 tablespoons chopped cilantro, and salt and pepper.
Watercress
L.A. doesn't do iceberg lettuce, so Bobby tops off the burger with this peppery green instead.
Tomato
One thick, juicy slice takes the place of ketchup.

take a drive up to... point reyes

About 2 hours north right on the coast is one of my absolute favorite places. From the main parking lot of the ranger station in Point Reyes you can go on a hike to the coast, drive about a mile south to Stinson Beach, or drive about 15 miles over to the lighthouse; preferably, do all of the above. We went on a gorgeous day and the drive was beautiful. The lighthouse is unfortunately closed on the tuesdays and wednesdays, when we chose to go; but luckily Martin and I have no problem jumping fences :) If you're ever in the mood for a relaxing day on the coast, take a trip up to Point Reyes.

a few days in... Big Sur

I apologize for abandoning the blog this week; but to be honest, I'm not that sorry, because I had a fabulous week in Big Sur California. Just a few hours south of the bay area, it truly was one of the most beautiful places I have ever been. We camped at the Big Sur Campgrounds, hiked up and around Julia Pfeiffer Falls, travelled around Andrew Molera state park, and enjoyed open mic night at The Maiden Pub. To top it off spent the last day at the beach in Santa Cruz, while on our way home. Definitely a vacation worth taking.

By the way, that's the love of my life. You'll hear more about him soon enough ;)
