I love cooking vegetables! They're so easy, and it's just the best way to create a healthy meal, throw a vegetable on the side!
1 small onion chopped
1 clove of garlic minced
2 cups of kale chopped
4 medium zucchinis chopped
1 cup finely chopped cooked ham
Red pepper flakes/parmesan cheese
Saute onion and garlic in a drizzle of olive oil for about 5 minutes, until they start to soften a bit. Add the kale and zucchini, and saute to your preference! We like our veges pretty tender (it's easier for the kids to eat), so for us, it was another 10 minutes, for crisp, it would only be another 5. Salt and pepper to taste, transfer to serving dish, and cover in foil (to retain heat). In the same pan saute your ham bits over high heat until crispy (a couple minutes) and add over your vegetable mix. We had left over ham, which is why I added it, but you could use bacon or sausage or no meat at all. For an extra kick, sprinkle some red pepper flakes and parmesan cheese over the top!
